Quinoa bowl:


  • 1 cup quinoa
  • 300 g of large prawns
  • 1 tablespoon paprika
  • 200 g of peas
  • A handful of spinach
  • 1 avocado
  • 1 cucumber
  • 1 large carrot
  • Coriander
  • Salt and pepper to taste
  • 2 oranges
  • 1/5 cup sugar
  • 1 tablespoon wine vinegar
  • 1 tablespoon corn starch
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger

1. Boil and peel the prawns. Roll them in paprika and fry them quickly over high heat (one minute on each side).

Prawn quinoa bowl (4).jpg 2. Put all the ingredients for the sauce except starch in a saucepan, bring to a boil and reduce the heat to medium-low.


Pour a couple of tablespoons of sauce into a small bowl, add starch and mix well, you should not have lumps!


Pour the starch mixture back into the saucepan. Simmer the sauce on the stove for a few more minutes, stirring constantly, until it thickens, then remove it from the heat.

4. Assemble the bowl. Put the prawns, spinach, avocado, cucumber and carrot, green peas on the quinoa. Sprinkle with coriander, and pour over the sauce.
